Cozy sweaters, warm beverages, and PUMPKIN everything! Ok, well not everything! I’m actually one of the rare few who has yet to get into the pumpkin spice trend. However, aside from the colder temperatures and earlier sunsets, I love all things FALL! My family and I make seasonal bucket lists and this fall we included a pumpkin pancake feast!
My kids were excited to make these delicious pumpkin pancakes from (mostly) scratch. We created our very own charcuterie breakfast board fit for toddler fingers.
The BEST Pumpkin Pancake Recipe
(2) cups of your favorite pancake batter (and the necessary extras, eggs, milk, etc.)
*We used a non dairy milk and included (1) cup of almond milk and (2) eggs for our recipe
(½) cup of vanilla non dairy yogurt
*We LOVE SoDelicious coconut milk based yogurt
(2) Tablespoons of cinnamon
(1) Cup of Pumpkin Puree
A sprinkle of nutmeg
I found this cool pumpkin pancake/waffle maker on amazon, used 2 tablespoons of batter, and left it on for about 30 seconds! We had the perfect pancakes, and the kids excitedly did a countdown each time (lol). Add a little maple syrup or powdered sugar and voila! Brunch heaven! I also added fruit and some turkey breakfast sausage.
